Firecracker Popcorn

Let's Hear it for the Red, White, and Blue!
Let’s Hear it for the Red, White, and Blue!

Back in May one of my students, Devon S., gave me a bag of white chocolate-covered popcorn for Teacher Appreciation Day.  But instead of using regular popcorn, his mom used buttery corn puffs and it was so delicious!  Of course while I munched on my treat I thought of ways to use this basic recipe to make other treats and here’s what I came up with.  I call it Firecracker Popcorn and it’s a perfect treat for your Independence Day celebration.

A great thing about this recipe is that all you need to do is change the color of the M&Ms and sprinkles to personalize it for any holiday or snacker.

8 cups Puffcorn (or regular popcorn if you wish)

Blue and red sprinkles

    Melt chocolate in double boiler

Melt white chocolate chips over a double boiler or in the microwave.  I couldn’t find my double boiler so I just used a sauce pan willed with a few inches of water and Pyrex bowl.  Remember that if you use the microwave to watch it carefully because it’s very easy to burn.

  2. While the white chocolate is melting, in a large mixing bowl combine Puffcorn, pretzel pieces, and mixed nuts.
  3. Once the chocolate is smooth and completely melted, drizzle over Puffcorn mixture and toss using two forks.  When mixture is thoroughly coated with chocolate, add M&Ms lightly tossing.
  4. Spread mixture on a cookie sheet.  Sprinkle with red and blue sprinkles.  (It’s a good idea to cover the baking sheet with parchment paper as it will make clean up a breeze.)  Allow to set.
  5. Store in air tight container.

This delicious treat will make a wonderful addition to your Independence Day festivities–you and your guests will love it!  To give Firecracker Popcorn as a gift, package in a cellophane bag tied with a festive bow; a patriotic tin; or popcorn box; or air tight container wrapped in a patriotic bow.  I got my plastic popcorn boxes in the dollar section of Target–a fun and easy way to serve or give this yummy snack.
