Chewy Ginger Molasses Cookies








Church cookbooks have the best recipes. I am famous for these cookies but they come from a vintage church cookbook and haven’t been tweaked at all. The credit goes to dear Mrs. B. For this post, I did rename them to give you an accurate description right off the bat. Chewy, but they taste like molasses-y gingersnaps. Give these cookies a try; you will not be disappointed–and  neither will your friends and family.

  • 3/4 C. shortening
  • 1 C. sugar
  • 1 egg
  • 1/4 C. molasses (any kind: sulfured, unsulfured, blackstrap)
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. cloves
  • 1 tsp. ginger
  • 1 tsp. cinnamon
  • 2 C. all-purpose flour

Cream shortening and sugar. Add egg and molasses. Add rest of ingredients. Mix. Dough will be thick. Roll into 2 inch balls. Coat with sugar. Place 2 inches apart onto lightly sprayed or greased cookie sheet. Bake at 375 degrees for 9 minutes. Watch and do not overbake. Cookies will be done when the tops just start to crack. Immediately transfer to a cooling rack. Makes about 2 dozen.
