What’s not to love about the great combination of peanut butter and chocolate? I’m from the great state of Ohio where buckeyes abound–whether it’s the tree, the sports or the candy. A favorite all around! Sometimes I just put it like this: Whoever invented buckeyes was a genius! Here is a recipe I hope you’ll love.
BUCKEYE CANDY (recipe by ideastimestwo) (makes around 58)
- 3/4 c. butter, softened
- 4 1/2 c. unsifted powdered sugar
- 2 c. peanut butter
- 1 tsp. vanilla
- 1 1/2 lb. chocolate melting wafers (it’s no secret–my favorite is Ghirardelli)
1)Combine first four ingredients until thoroughly combined. You can start by using a mixer, but in the end, it’s just easier to knead it like a dough. It will be very stiff.
2)Roll into balls approximately 3/4″ across. Chill for an hour in the refrigerator or freeze for about 20 minutes.
3)Melt chocolate in microwave using short bursts or use a specialty chocolate melter. Pour into a small cup for ease of dipping.
4)Insert a toothpick into center of ball and dip into melted chocolate to cover the ball most of the way up. Place on wax paper until set.
