Easy Cheesy Scalloped Potatoes

I recently made these potatoes for 100 people. Yes, you read that right. 100. I whipped them up the day before the event and popped them in the oven to warm up and melt some gooey cheese on top. Mmm. Nothing says comfort food like scalloped potatoes. This might be a great alternative to mashed potatoes for your holiday meal since they can go from the oven right to the table without any further preparation.

Easy Cheesy Scalloped Potatoes (recipe by ideastimestwo)

  • 4 lb. potatoes (about 13 medium sized)
  • 3 cups heavy cream
  • 1 c. milk
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 1/2 tsp. onion powder
  • 3/4 tsp. garlic powder
  • 2 c. cheddar cheese

Prepare a 9×13 baking pan or 3 qt. casserole dish by coating with butter. Peel and slice potatoes 1/16″ thick. Set aside. Place cream, milk, and spices in a large, heavy saucepan. Bring to a boil and reduce to a simmer, stirring frequently. Add potatoes. Simmer for 15 minutes until potatoes are tender, stirring frequently. They should be easy to pierce with a fork but slightly too undone to eat. Pour thick potato mixture into prepared baking dish. This is the point where you can go ahead and pop it into the fridge until a day or two later. Or go ahead and bake right away. When you are ready to bake, sprinkle cheese on top. Bake at 350 degrees for 15-20 minutes. Enjoy!

Nothing, but nothing makes potatoes easier to slice than a sharp mandoline (buy here). Make sure to use the food gripper. The mandoline slices through the potato very quickly!

I developed this recipe using garlic and onion powders because my family has sensitivities. You may use 1 small finely diced onion and 2 cloves garlic, pressed.
