Beefy Cheese Dip

Can you eat just one? I dare you to give it a try! Here is an easy hot cheese dip that will make your mouth very happy. It makes enough for a whole crowd and you can dump everything into the slow cooker and move on. Easy cheesy.

Beefy Cheese Dip (makes 8 cups)

  • 2 lb. ground beef
  • 2 packets taco seasoning (1.25 oz. size)
  • 1- 10 oz. can Ro-Tel
  • 1- 10.75 oz. can cheddar cheese soup
  • 1- 15 oz. jar salsa con queso dip
  • 2 lb. box of Velveeta-type cheese (I used a store brand)

Brown ground beef. Drain. Add taco seasoning to ground beef and make per envelope instructions (usually this is adding a small amount of water and simmering for 10 minutes).

Slice up the Velveeta-type cheese into smaller bits. Place in slow cooker. Add the rest of the ingredients, including meat. Give it a stir. Slow cook on low for 2-3 hours. Keep on warm setting.

You can totally cheat and warm this up in a microwave and then place in a slow cooker to keep warm.
