Here’s a St. Patrick’s Day crowd pleaser–and it has nothing to do with alcohol! Who doesn’t love cupcakes? Whip these up and get your green on! I’ll fill you in on the details.
To begin, grab a cake mix in your favorite flavor and bake according to box directions. This may be done a day or two ahead of time.
Gather the ingredients you’ll need for decorating both types of these yummy treats:
- Green cupcake liners
- Frosting ( store-bought or homemade)
- Green candy melts (found at craft hobby stores)
- Mini Reese cups, number will be as many as your cupcakes
- Mini yellow M&M candies
- AirHeads Extreme
- Wilton gold Color Mist (found at craft hobby stores)
- Green sugar
Let’s start with the shamrock cupcake.
To make shamrock topper:
Place wax paper on top of a cookie sheet in preparation for making the shamrocks. Place green candy melts in a microwave safe dish and place in microwave. Turn on microwave and cook green candy melts at 30 second intervals. Stir after each interval. Continue until candy is completely melted. Place melted candy in a zipper type bag. With scissors, snip off the corner of zipper bag to make a small hole. Squeeze the bag to form shamrocks on the wax paper. Think of making three heart shapes that connect at their points. Tap pan to flatten slightly. Sprinkle immediately with green sugar. Let set until firm, 5-10 minutes. If you are also making the rainbow cupcakes, make tiny shamrocks as an extra decoration for those. No need to sprinkle with sugar. Make one or two tiny shamrocks per cupcake.
Save a small amount of white frosting for securing gold coins in pot. Tint majority of frosting with a little green food color to make a nice light baby green color. Swirl on top of cupcake in circles using a plain pastry bag or zipper bag (with hole cut in the corner). Swirl from the outside around to the inside of the cupcake top, forming a small mountain of green lusciousness. Sprinkle with green sugar. Place a completed shamrock on top. Done!
To make rainbow cupcake:
It is helpful to start with a flat top for your rainbow and pot of gold decorations. You may decide to gently shave off the top crest of the cupcake. Frost with light green icing. Sprinkle lightly with green sugar before frosting crusts over.
To make pot of gold:
Over a paper towel,spray yellow mini M&M’s with Wilton gold spray mist. This will give a gold sheen to the M&M’s. Let dry (5-10 minutes).
Meanwhile, to make pots, slice a small Reese cup in half sideways.
Gently scoop out the peanut butter filling. Sometimes it will fall out on its own.
Place a small amount of icing in bottom of hollowed out Reese cup. Place dry gold M&M’s in pot, using little dabs of white icing to secure.
Cut one AirHead Extreme strip in half width-wise to make a two pieces around 2 1/2 inches long. Place two blobs of light green icing near the back to help prop up the rainbow. Place each short end of AirHead Extreme into the blobs of icing you created on the cupcake to form rainbow.
Secure pot of gold on top of cupcake with a small amount of icing. Place tiny shamrock (the ones made of candy melts as described above) on top of cupcake for extra decoration. Done!
