Here is a simple way to step up a standard cake mix for lemon lovers and then make it in a mini bundt cake pan to form small tea cakes. Top each cake with a lemon glaze for a zesty addition. Yum! For a great Mother’s Day gift, pair the tea cakes with a homemade cake stand. She’ll be thrilled!

Lemon Tea Cakes

1 box lemon flavored cake mix, mixed according to package directions

2 TBL. lemon juice (from fresh lemons or bottled)

2 tsp. lemon extract

Lemon Glaze:

2 cups powdered sugar

4 TBL lemon juice (from fresh lemons or bottled)

milk, enough to bring glaze to dripping consistency






Mix box cake mix per box instructions. Add lemon juice and extract. Mix thoroughly. Spray individual cavities in mini bundt pan with baking spray. pour cake mix into cavities, filling about 3/4 full. Bake at 350 degrees for about 10 minutes. Watch carefully. Let cool in pan. Tip over and gently loosen edges with fingers. Finish by dripping glaze over the top of each cake.

Directions for glaze:

Put powdered sugar in a small mixing bowl. Add lemon juice and stir. Add milk one teaspoon at a time until glaze is of the correct consistency.

Supplies Needed For Cake Stand:

Dessert or dinner plate, I used an antique but any dish will work

Candlestick or any dish that will make an interesting base

E6000 glue

Fine gauge sandpaper

Rubbing alcohol for cleaning surface before gluing









1)Rub the center of the underside of the plate with sandpaper to rough up the surface in preparation for glue. Do the same with the top of the candlestick.

2)Clean roughed up surfaces with a cotton ball and rubbing alcohol.

3)Squeeze E6000 onto plate and candlestick surface and leave to dry and set per package directions. Done!
